Grilled eggplants with fresh tomato sauce


Grilled eggplants with fresh tomato sauce, chef, Giannis Apostolakis, recipe

Ingredients for 1-2 pax


  •  2 eggplants

  • 1 finely chopped tomato

  • 1 tbsp fresh finely chopped coriander

  • 1 tbsp finely chopped onion and garlic

  • 3-4 tbsp extra virgin olive oil (Amfissis variety)

  • 1 tbsp vinegar

  • Salt, pepper and a bit of bukovo

Execution


Cut eggplants along and lightly grill them in a grill pan or grill.

Squeeze the chopped tomato until drained of liquid. Add successively and mix with coriander, onion, garlic, extra virgin olive oil, vinegar, salt, pepper and bukovo.

Pour the mixture onto the eggplants.
