Chicken with parsley pesto

Chicken with parsley pesto, recipe, chef, Giannis Apostolakis

Ingredients for 1-2 pax

  • 2 chicken filets

  • 1 parsley bunch

  • 1-2 garlic cloves

  • 5 tbsp extra virgin olive oil (Koroneiki variety)

  • 1 tbsp aged gruyere

  • Salt, pepper, oregano


Marinate the chicken in 2 tbsp. extra virgin olive oil adding salt, pepper and oregano and leave to rest for a while.

Preheat a frying pan with grills or grill and cook until well done.

Then mash the parsley leaves with the remaining extra virgin olive oil, garlic and aged gruyere and serve the mixture on a plate and lay the chicken on top. An olive oil with a moderate spicy taste will complement our dish ideally.
