The extra virgin olive oil Agriston Argilos I Early is a monovarietal extra virgin olive oil from the Chalkidiki variety. The fruit is harvested at an unripe stage in early October, yielding high nutritional value to the product as well as unripe aromas of fruits and herbs.
This particular variety captures a rich organoleptic profile covering a wide range of flavors, starting with a moderately fruity aroma with notes of unripe almond, characteristic of the Chalkidiki variety, unripe fruit, freshly cut grass and herbs capturing its elegant and fresh character. At the same time a feeling of freshness is sensed on the palate when tasting, accompanied by a medium spicy and a medium to delicate bitter element.

Agriston olive oil – Agriston Argilos I EarlyAt the foot of Mount Paggaio, in the northwestern part of the region of Kavala, known for the euphoria of its soil and its many and great springs, and at a short distance from the sea, the olive trees of the Chrysafoudis family are cultivated, with the discreet name Agriston, a compound word consisting of the words agriculture and excellence (ariston), thus clearly stating the purpose of the project.
The aura of the Aegean Sea, the mild temperatures throughtout the year, the long intervals of sunshine together with the singular composition of the soil which bears the elements of clay, sand and limestone, create a microclimate ideal for the cultivation of different varieties of olives. The family’s passion for the art of olive cultivation incorporates traditional knowledge and practices in combination with modern methods of cultivation and oil extraction, always remaining committed to the production of excellent quality extra virgin olive oil. To this end and with a view of creating a fully vertical unit to control the entire production process, they created a modern olive mill with PIERALISI equipment with Protoreattore, of a maximum temperature of 25o C. The conventional cultivation method is applied in the olive groves with special attention to the use of pesticides as in the area a large part of the production of olive oil and table olives, for the most part Chalkidiki variety for which it is famous for, follows the method of precision agriculture under the guidance of the American School of Agriculture, which is the most appropriate tool for the sustainable management of production and the rural environment.
Harvesting begins in early October and is carried out exclusively by mechanical methods, thus ensuring the integrity of the fruit. The fruit is then transported directly to the privately owned olive mill for the extraction procedure, direct filtering, and storage in stainless steel tanks under controlled temperature conditions with the addition of nitrogen, which is also applied during bottling, ensuring the excellent quality and shelf life of the final product.
