Refreshing salad with colourful cherry tomatoes, herbs, and mizithra*cheese with extra virgin olive oil of Koroneiki variety


Recipe Vasilis Leonidou Refreshing salad extra virgin olive oil

Ingredients for 1-2 pax


  • 2-3 medium tomatoes

  • 3-4 organic red cherry tomatoes

  • 3-4 organic black cherry tomatoes

  • 3-4 organic yellow cherry tomatoes

  • 1 ½ small cucumber

  • 4-5 white grapes

  • 150 gr fresh sour mizithra* cheese

  • 1-2 carob rusks

  • ½ white or red onion cut in slices

  • 1 tbsp white vinegar

  • 3-4 natural green table olives (Agriniou variety)

  • Fresh basil and mint

  • Fresh oregano and thyme

  • Dried oregano

  • 8-10 tbsp extra virgin olive oil of Koroneiki variety

  • Salt

* mizithra = Greek fresh cheese resembling Italian ricotta

Execution


Wash and dry all your ingredients. Cut the cherry tomatoes in half and place them in a bowl together with part of the sliced cucumber and the ripe tomatoes and marinate them with a small part of the finely cut basil and mint, salt, a little oregano and extra virgin olive oil.

Break the rusks in smaller parts using your hands and place them on a plate, add the mixture with the tomatoes and cherry tomatoes and sprinkle on top the grapes cut in two, the remaining cucumber, the onion, the table olives, the mizithra* cheese and the rest of the herbs and drizzle with vinegar and extra virgin olive oil.

Tip: You can marinate the tomatoes and cherry tomatoes for 1 hour with the extra virgin olive oil of the recipe.
