Salvation Early Harvest EVOO
Salvation Early Harvest Extra Virgin Olive Oil is produced exclusively from the Myrtolia variety, an indigenous ancient variety that is cultivated in the region of Laconia and bears the valuable seal of the Protected Geographical Indication. The fruit is harvested from the beginning of October, contributing both to the high nutritional value and the unripe fruity aromas, dominated by freshly cut grass, tree leaves, herbs, artichoke and spices.
When tasting it, the rich range of fruity aromas is followed by a bold spicy sensation combined with a delicate bitter element of freshness. The unique bottle with the square base, the curved neck and the simple label, influence us positively for the content, transmitting emotions, sensations, flavors and smells, creating an image that is attractive but at the same time honest and authentic.

Salvation – Salvation Early Harvest EVOOThe Apostolakis family already counts six generations in the cultivation of olives and the production of extra virgin olive oil, until today where the baton of this long tradition has been taken over by the younger generation and specifically Kyriakos Apostolakis. The production of excellent quality extra virgin olive oil is a timeless non-negotiable value that Kyriakos serves with passion and dedication. Modesty and love for nature and the olive tree, respect for the achievements of his ancestors but also commitment to research and innovation at all stages of production, contribute significantly to the final product.
The family olive grove with the name “Trizia” is located in the village of Metamorfosi of the Municipality of Monemvasia, in the southeastern area of Laconia in the Peloponnese and bears the stamp of the Protected Geographical Indication (PGI) “Laconia”. The specific location of the estate, on the outskirts of mount Parnonas at an altitude of 120m., between two mountains, the southern orientation of the plantations, the mild climate and strong winds which protect olive trees from various diseases and finally the stony soil, all guarantee the production of an olive oil rich in organoleptic characteristics. In an effort to increase production, cooperating olive groves are recruited which must equally meet the geographical and cultivation conditions set by Kyriakos Apostolakis.
The early harvest of the fruit from the beginning of October is carried out exclusively by mechanical means to ensure the integrity of the fruit, while the immediate oil extraction follows the cold pressed method in a cooperating olive mill in the area. Filtering and storage in stainless steel tanks under controlled temperature conditions follow immediately after where the olive oil remains for a period to “rest” before the packaging in 100ml and 500ml glass bottles. The name Salvation was chosen to mark the saving contribution of olive oil to human health and life.
