Baglatzis Estate – Oath Organic EVOO Baglatzis Estate is located in the village of Anavra in the region of Phthiotis, in one of the most ancient and historically important regions of Thermopylae and Delphi. The microclimate and the altitude of the Kallidromou mountain range with the sea breeze from the Maliakos gulf, have the ideal conditions for the olive groves. The family has cultivated their olive groves for generations and this vast experience combined with modern methods of cultivation, oil extraction and packaging produce their extra virgin olive oil. The method of cultivation is organic and employs all the good practices including full recording and monitoring of the crop using a field journal which traces the olive tree’s entire lifespan. The olive harvest takes place in mid-autumn when the fruit is still unripe using the handpicking method or other mechanical devices in order to avoid injury. Cold pressed extraction is performed followed by storing the juice in stainless steel tanks under control temperature before proceeding to the packaging, all of which takes place in the family’s own facilities. The variety cultivated for the production of Oath Organic EVOO is Arbequina.
