Efthimios Christakis – The Sin Oil Cold Smoked Strong 100 ml – Smoked Olive Oil

The company Efthymios Christakis, named after its founder, has been active in the olive oil sector since 2012 and is based in Germany. Originally from Agrinio, Efthimios grew up in Germany and from a young age came in contact with the field of gastronomy as his parents ran a restaurant. The primary production sector gained its interest, initially choosing to study at the School of Fisheries & Aquaculture Technology of the Technical Educational Institute of Messolonghi, while a few years later, at the age of 25, the olive oil sector attracted his interest and became his main occupation. It was the time when the development of more advanced technologies for the production of premium olive oils began, which were promoted in exhibitions throughout Europe.

Efthimios’ systematic engagement with olive oil through tasting seminars, trips to international exhibitions and the creation of a professional promotion channel in the current standards of social media, gained the attention of large olive oil companies, which entrusted him with their products for their marketing promotion international food fairs. With important milestones such as the promotion of the World Olive Oil Bar Exhibition in Madrid as well as the Chamber of Commerce in Portugal, Efthimios gained not only recognition and reward from the leading companies in the industry but mainly valuable experience and knowledge, which led him after years of experimenting, in the creation of the smoked olive oil The Sin Oil, with a patent. It is worth mentioning that his involvement with the tasting of olive oil was not limited to the tasting of the product as such but in its combination with haute gastronomy and confectionery, creating imaginative combinations. Participating in tasting festivals of various products but also training future chefs in leading cooking schools in Germany and Austria, where the use of olive oil constitutes a separate teaching unit, gave rise to the idea of the smoked olive oil with a natural method.

The production facilities of the company are located in the area of Agrinio in a fully vertical unit with privately owned mountainous and semi-mountainous olive groves in the greater area of Agrinio.  The smoking method is carried out in two phases, where the first consists in the controlled burning of wood with resistors (the resistor is pulsed, ie heated abruptly to produce smoke and not through the classical method with fire) in a special chamber for the production of smoke. Different types of wood are used for burning, but mainly oak. In the second phase follows the transfer of the smoke through special pipes to a different chamber where it comes in contact with the olive oil. The transfer enhances the temperature drop of the smoke as it cools inside the pipes. During the process the olive oil does not exceed temperatures of 22-23 oC, thus preserving its nutrients and quality.

The company started its activity in 2011, with the return of its founder, Apostolos Porsanidis-Kavvadias from Paris, where he lived and worked as an industrial designer. Based in the village of Tzavros on the east side of central Corfu, the olive groves are scattered in the wider area of central Corfu, in the villages of Poulades and Skripero.

The centuries old family olive groves are located in mountainous and semi-mountainous areas, on sloping soils, of clay and stone in texture, which favors the draining of the water while enjoying the mild and sunny climate of the area. Dr. Kavvadia Organic EVOO derives its name from the owner’s grandfather, an orthopaedist by profession and a lover of the cultivation and production of quality extra virgin olive oil, which he considered equally beneficial to a medicine. With respect to the knowledge and experience inherited by the grandfather and in combination with the modern cultivation methods required by organic farming, the olive groves grow in a healthy and balanced ecosystem while bearing the certification of GREEN CONTROL.

The olive harvest is carried out solely by mechanical means, from the beginning of October until usually the beginning of November, when the fruit is still unripe. The oil extraction is performed on the day of harvest and follows the cold pressed method in two cooperating olive mills which meet the required specifications. Storage in stainless steel tanks and under controlled temperature conditions ensure the rich organoleptic profile of the final product.

The Karabelas family already counts four generations in the cultivation of olives and the production of extra virgin olive oil around Ancient Olympia. When Dimitris Karabelas, a third-generation descendant, and Franca Magrini, came together under a common vision, bringing the traditions of two Mediterranean countries on olive growing as well as their common love for this sacred place, they created in 2008 the company “Agriturismo Magna Grecia”. The company’s activities focus on the development of agritourism in the region and the promotion of the family’s products while at the same time being a point of reference in advancing the culture and tradition of Ancient Olympia which is a source of inspiration and admiration.

Taking the baton from their parents, Alexis and Francesco, inspired by the history and tradition of their homeland, with a focus on new technologies that allow full control of the production process and the final product, created The Olive Temple, a “temple” dedicated exclusively to the olive tree. With studies at the Polytechnic and Agricultural University respectively, they combined their cognitive subjects taking advantage of the privately owned olive groves of 180 acres, next to which they installed the modern two-phase olive mill from Tuscany, whose innovative functions ensure the organoleptic characteristics and high nutritional value of the olive oil while at the same time bearing the ISO and HACCP certification for the production, storage and standardization of the final product. Respect and harmonization with the natural environment with predominant characteristics the Mediterranean climate of the region, ideal for the cultivation of olives, the location of the olive groves at low altitudes and in fertile plains, between the rivers Alfeios and Kladeos, important for the irrigation of crops, dictate the selection of organic farming and the management and recycling of crop and production residues which are used as fertilizer and fuel to meet the energy needs of the facility. Makaria Terra is the family’s olive grove which is located in the village of Skala, in the region of Messinia in the Peloponnese at an altitude of 340 metres. 2000 olive trees of Koroneiki variety are cultivated in the area called Makaria terra (=blessed land), which takes its name from antiquity due to the particular properties of the soil and the unique microclimate.

With respect to the family tradition, the olive trees are cultivated with the minimum human interference without the addition of chemical pesticides and artificial irrigation for watering. The olive harvest begins in early November while the fruit is still unripe. The oil extraction in the local mill follows the cold pressed method while the juice is then stored in stainless steel tanks in a controlled temperature in order to preserve all its beneficial properties and aromas.

The production of excellent quality extra virgin olive oil is a timeless non-negotiable value that Kyriakos serves with passion and dedication. Modesty and love for nature and the olive tree, respect for the achievements of his ancestors but also commitment to research and innovation at all stages of production, contribute significantly to the final product.

The family olive grove with the name “Trizia” is located in the village of Metamorfosi of the Municipality of Monemvasia, in the southeastern area of Laconia in the Peloponnese and bears the stamp of the Protected Geographical Indication (PGI) “Laconia”. The specific location of the estate, on the outskirts of mount Parnonas at an altitude of 120m., between two mountains, the southern orientation of the plantations, the mild climate and strong winds which protect olive trees from various diseases and finally the stony soil, all guarantee the production of an olive oil rich in organoleptic characteristics. In an effort to increase production, cooperating olive groves are recruited which must equally meet the geographical and cultivation conditions set by Kyriakos Apostolakis

The early harvest of the fruit from the beginning of October is carried out exclusively by mechanical means to ensure the integrity of the fruit, while the immediate oil extraction follows the cold pressed method in a cooperating olive mill in the area. Filtering and storage in stainless steel tanks under controlled temperature conditions follow immediately after where the olive oil remains for a period to “rest” before the packaging in 100ml and 500ml glass bottles. The name Salvation was chosen to mark the saving contribution of olive oil to human health and life.
