Grilled vegetables

Grilled vegetables, chef, Giannis Apostolakis, recipe

Ingredients for 1-2 pax

  • A few slices of eggplant, zucchini, peppers of various colours, mushrooms, fennel

  • 2 finely chopped parsley

  • 1 finely chopped garlic clove

  • 4 tbsp extra virgin olive oil (Adramytini variety)

  • 1 tbsp of balsamic vinegar

  • Salt, pepper


Slice the vegetables. Heat a frying pan with grills or our grill.

We grill each type of vegetable separately.

Place the vegetables in a large bowl, add the extra virgin olive oil, parsley, garlic, balsamic vinegar, salt and pepper and mix well, leaving for five minutes to exchange the aromas.

We serve them by forming a trunk so that each bite includes a little bit of everything.
