Fruit salad with Madagascar vanilla ice cream, ginger, mint and extra virgin olive oil of Makri variety


Recipe Vasilis Leonidou Fruit salad with Madagascar vanilla ice cream extra virgin olive oil

Ingredients for 1-2 pax


  • ½ red apple

  • ½ green apple

  • 1 plum

  • 10 white grapes

  • 5 red grapes

  • ¼ pineapple

  • 4-5 strawberries

  • 1 kiwi

  • ½ banana

  • 1 orange

  • 15-20 fresh pomegranate seeds

  • 3 red raspberries

  • 2 berries

  • Ginger zest

  • 2 dates

  • 10 dried cranberries

  • Fresh mint

  • 1-2 scoops of Madagascar vanilla ice cream

  • 6-8 tbsp extra virgin olive oil of Makri variety

  • ¼ tspn black pepper (and/or green pepper)

Execution


Cut all the fruit into small dices and the dried ones into smaller pieces and marinate them with black and/or green pepper, ginger zest,,fresh mint and extra virgin olive oil.

After 1 to 2 hours, ideally in the fridge, serve in a deep dish with 1-2 scoops of Madagascar vanilla ice cream, add a little black pepper to the ice cream, sprinkle with extra virgin olive oil and decorate the dish with mint leaves.
